Jambalaya: Scallops, Shrimp, Venison Sausage, Pork Belly and Chicken Jambalaya topped with Jalapeño Purée Relish with Roasted Red & Yellow Peppers and Roasted Garlic It was a fun day with an 8-hour Slow Cooker Louisiana Hot Pot to cook the pork belly, smoked venison sausage, and chicken. Slow cooker ingredients were (1) onion, (2) cloves of garlic, celery salt, smoked paprika, liquid smoke, chili powder, cayenne, juice of (1) passion fruit and other spices. I included a big hunk of 2-house smoked beef to stew and provide extra fat. Air-fryer used to cook corn with husk, roasted jalapeños and bell peppers to remove the skin, and to darken the shrimp and scallops. Tuscan Butter Chicken with Roasted Garlic Risotto This is a special dish for me personally as the tomatoes I used were grown by my then 4 year old son in December here in Chile. I’ve been waiting for over 3 months to harvest them with him. But due to complications with my ex wife, I’ve been unable to see my son. As the tomatoes have started to shrivel on the dead plants, I had to pick them today before it was too late. I’m sad that my son won’t get to eat the vegetables we planted together. And I know he would love this meal I made. When I was a teen and took an interest in cooking, this was one of the first dishes I perfected. It was such an important experience for me. I’d walk outside to the my family garden in New Jersey and harvest all the important ingredients I needed. I’d pick the Roma tomatoes, fresh sage, thyme and chives. The recipe is very simple: 1 onion 2 chicken breasts 6 Roma tomatoes Sage Garlic Thyme Chives Salt and pepper Finish with butter For this version, instead of cooking the tomatoes, onion and garlic, i roasted the garlic and added it in later.
