Keto Fat Bomb Recipe

 




Looking for an easy way to get your daily fats and enjoy a tasty dessert?


Here’s an easy peanut butter and chocolate keto fat bomb recipe:



Inside:

* In a mixing bowl, combine…

1-cup of sugar-free natural peanut butter

2/3 cup of almonds

1/2 cup 100% cacao chocolate chips

1/2 0 carb white chocolate chips

* Scoop mixture into an ice tray or chocolate mold and place in the freezer for 1 hour 




Outside:

* In a double boiler, melt 1 cup of 100% cacao

* Mix in 2/3 cups heavy whipping cream and 1/2 cup erythritol sweetener

* Remove from heat 



Final Steps:

* Remove a single peanut butter block from the ice tray, dunk in the chocolate, set on a tray

* Repeat for each peanut butter block

* Place in refrigerator and cool

* Eat and enjoy!

Keto Pork Chops in Garlic, Thyme and Ghee Sauce





This is an easy recipe as you need only the 4 ingredients and the ghee can be replaced with butter.

Recipe:
  • Preheat oven to 425F
  • Add salt and pepper to the 2 inch thick pork chops
  • Peel a head of garlic
  • Add 1 cup of ghee to a bowl and melt
  • Add the garlic to the ghee 
  • Seer the pork chops on high heat with some olive oil for 2-3 minutes per side until browned
  • Turn off the heat and pour in the garlic and ghee mixture
  • Using a spoon, pour some of the liquid on top of the pork chops
  • Add the thyme sprigs to the pan
  • Place the pan in the oven and bake for about 10-15 minutes until you have an internal temperature of 125 F
  • Pour more of the liquid ghee mixture on top of the pork chops and serve

Try sautéed spinach with seasoned mozzarella and snow peas with crispy bacon.

Spinach:
  • sauté the spinach
  • in a separate bowl, dice some medium liquid mozzarella and season with garlic power, onion powder, black pepper, salt and Korean red pepper
  • Mix spinach and mozzarella together and serve




Snow Peas and Bacon:
  • cook your bacon, crispy is ideal
  • Cut the bacon and place in a bowl
  • Sauté the snow peas in olive oil with black pepper and 1/2 cup of water. 
  • Cover and routinely stir until tender yet still crisp on the inside
  • Drain the liquid
  • Place the snow peas in a serving bowl and pour some of the ghee mixture and stir
  • Top with the crispy bacon and serve

This is an easy side dish that is so good, it can be a vegetarian main dish on its own.

The subtleness of the ricotta makes a quick tomato and basil sauce as the ideal pairing.

For this meal, the keto un-ravioli was served with Italian sausages topped with a sautéed jalapeño and prosciutto.

Ingredients:

  • 1 large container ricotta
  • 2 eggs 
  • 1 cup almond flour
  • 1 cup mozzarella 
  • 1/2 cup parmesan 
  • 1 cup cooked spinach
  • 2 tsp Garlic power
  • 1 tbsp onion powder
  • Salt and pepper to taste


Recipe:

  1. Preheat oven to 425F
  2. Mix all ingredients in a bowl
  3. Pour into medium size glass cookware
  4. Top with additional mozzarella and parmesan
  5. Bake at 425F for 20-30 minutes
  6. Broil for a few minutes to brown the top layer of cheese

  • 1/2 cup erythritol
  • 1 tbsp vanilla extract

  • 1 cup roasted butternut squash 
  • 1 cup heavy whipping cream
  • 1/2 cup coconut flour
  • 1/2 cup almond flour 

Mix ingredients by in a bowl and the. bake at 300F for 1 hour. Top with heavy whipping cream and cinnamon.

Keto Bufala Stuffed Filet Mignon and Pancetta Meat Balls


This is a fun one to make as I love making a red sauce.

To make sure you get your fats for the day, smoky pancetta/bacon is the star of the show.


To get started, fry up some bacon and place aside.

Also get 4 cloves of garlic piled up and covered in the oven to get roasted.


SAUCE:

Now get the sauce going:

  • I used onion powder instead of onions to keep the carbs lower today 
  • Just get your tomatoes cut and in your said pan with EVO. Feel free to add 1/2 cup of dry wine if you are well enough under your 20 carbs for the day.
  • Drain the bacon fat into the space pan.
  • Chop the bacon into large pieces and put half in the sauce to simmer.

KETO BREADCRUMBS:

These help with the texture of the meatballs. You can make these in bulk and save in the refrigerator.

In a large bowl, mix:
  • 2 cups of almond flour
  • 2 eggs
  • 1 tsp baking power
  • 1 tsp garlic powder
  • 1/2 tsp salt
Knead the dough and spread out in a baking pan, about 1 cm thick.

Bake on 400F until crispy

Let cool and crush in a food processor. 



MEAT BALLS:
  • In a large mixing bowl, add your ground beef
  • Take the remaining bacon and finely chop. Then add to the bowl.
  • Add 2 eggs
  • Add 1 cup of the keto breadcrumbs 
  • Season with salt, pepper, oregano, basil and garlic powder to taste
  • Add 1 tsp red pepper flakes
  • Add 1 tsp smoked paprika 

Forming Meatballs:

  • Take a handful of the meat mixture and flatten in your hand.
  • Add a 1x1 inch piece of bufala on top
  • Fold the meat around the cheese and roll into a ball
  • Repeat until all meat is used
  • In a large pan, brown the meatballs on all sides and remove from heat


FINAL PREPARATION:
  • In a medium Pyrex, add your sauce
  • Peel the roasted garlic and add the 4 roasted cloves 
  • Add the meatballs 
  • Cook on 300F until cooked through
  • Remove from oven and add more bufala on top of the meatballs 
  • Place back in oven at 400F to brown the cheese 

Grate some pecorino on top and enjoy!

Here’s an easy recipe for some tasty air fried Nashville fried chicken tenderloins.


  • On a small plate, add a layer of coconut flour and season with salt and pepper
  • In a flat bowl, ad egg for the egg wash 
  • In a large bowl, add almond flour, 2 tbsp chili powder, 1 tbsp cayenne powder, 2 tbsp garlic power, 1 tbsp onion powder, with salt and pepper to taste.


  • Dredge the chicken in the coconut flour
  • Move to the egg wash
  • Add to the almond flour to coat entirely 
  • Add to the air fryer and cook until complete 
  • Top with Frank’s Red Hot and serve on lettuce.

Keto Spicy Shrimp in Pink Sauce with Green Peppers

Keto Shrimp in Pink Sauce


Hopefully the Keto Chicken Parmigiana recipe was a hit with your family.

So today we’re making a similar recipe with the same sauce, but making it a spicy pink sauce to pair with some spicy sautéed shrimp!

Think of this as a mix between an Italian dish with some tasty Cajun and creole flavors.



PINK SAUCE:

  • San Marzano tomatoes
  • Garlic
  • Onion
  • Olive oil
  • Salt
  • Pepper
  • Pinch of erythritol 
  • 1 tbsp cayenne (or less to your linking)
  • When sauce is complete, turn off the heat and add 1 cup of heavy whipping cream or more depending on your taste!




GREEN PEPPERS:

  • In a separate pan, sweat 1 cut green pepper until soft, and then mix them into the sauce BEFORE adding the cream.

SHRIMP:

  • Peel 1 lb of raw shrimp
  • Dry them to remove excess water
  • In a medium sized bowl, add 1 cup of coconut flour
  • Mix 2 tbsp chili powder and 1 tbsp of cayenne powder. Feel free to use less if you prefer a less spicy heat
  • Mix in garlic powder, onion powder, salt and pepper to taste
  • Mix all bowl ingredients and add the shrimp to coat all sides of the shrimp
  • Sauté the shrimp on EVO for 1-2 minutes combined for both sides of the shrimp 
  • Add shrimp to the sauce and stir


Serve each plate on a bed of baby spinach and enjoy!

Keto Chicken Parmigiana with Green Pepper Recipe

 

Keto Chicken Parmigiana


Missing those Sunday red sauce days because you cut out pasta?

This meal will make you forget all about those carb slabs and focus on the tasty red sauce, fried breaded chicken, gooey cheese and a little touch of green pepper.



To start, simply get your red sauce going!


RED SAUCE:

  • San Marzano tomatoes
  • Garlic
  • Onion
  • Olive oil
  • Salt
  • Pepper
  • Pinch of erythritol 
  • Herbs to your liking
  • Feel free to add cayenne if you prefer it spicy




GREEN PEPPERS:

  • In a separate pan, sweat 1 cut green pepper until soft, and then add to then sauce.


CHEESE:

Prepare and season your cheese layer:

  • 2 cups of bufala 
  • 2 cups of a firmer cheese such as freshly grated cheddar or a firm mozzarella
  • 1 cup of grated parmesan 

CHICKEN:

  • Cut 8 chicken tenderloins into 1x1 inch squares 
  • Season and cover in coconut flour
  • Dredge in 1 egg
  • Coat with a mixture of almond flour, garlic powder, onion powder, salt and pepper
  • Cook on high in an air fryer

PREPARATION:
  • Preheat over to 350 F
  • In a medium oven-safe glass or metal container, place a layer of sauce at the bottom
  • Add the cooked chicken for the next layer
  • Add your cheese mixture on top
  • Cook until cheese is melted and browned

For the end, add 1 cup of heavy cream to your red sauce and mix. Add more cream if it’s no pink enough for you.

Add dollops of the pink sauce to the top of the dish either before placing in the over or after the dish is complete, 

Serve each plate on a bed of baby spinach.

Keto Chocolate Cheesecake Recipe

 

Living a keto lifestyle but still craving desserts? 

Here’s an easy keto cheesecake recipe that also handles that chocolate craving with this keto chocolate cheesecake recipe with a no-carb coconut crust. 


Keto Chocolate Cheesecake Recipe:

Coconut Flour crust:

  • 3/4 cup coconut flour
  • 2 large eggs
  • 1/3 cup melted butter
  • Pinch of salt
  • 1 tbsp erythritol 
  • 1 tsp vanilla 
  • 1 tsp orange zest
  • 1 tsp cinnamon 

- Preheat oven to 350F
- Mix all ingredients in a large bowl
- Roll the dough with a roller or use your hands to create spread on the bottom of the pan, leaving a raised edge.
- Bake for 15-20 minutes until crust is solid and golden brown


Chocolate Cheesecake filling:

  • 3 cups cream cheese
  • 3 large eggs
  • 1/2 cup erythritol
  • 1.5 tbsp vanilla
  • 3 tbsp 100% cocoa powder (sugar free)
  • 1 tbsp coconut flour or shredded coconut 
  • 1/2 cup heavy whipping cream 
  • 1/2 tbsp baking powder
  • Sugar free dark chocolate chips to taste

- Mix all ingredients in a bowl and let sit for 5-10 minutes 

- Add filling to the pie crust

- Bake for 1 hour at 325F

- Remove from oven once firm and let cool 

- Enjoy!

Keto Milanesa de Pollo Napoletana Recipe (Keto Pizza Crust)

Craving pizza but can’t have the carbs? 

 


Have you ever tried a milanesa de pollo?

Well, it’s a simple dish that gives you all the cheesy goodness of pizza but with chicken as the “crust”.

This recipe results in a softer “crust” than a traditional milanesa de pollo which is full flattened chicken breasts that are breaded and fried. Because of the egg and cheese in the chicken”dough”, it’s a softer bite each time. 


Chicken Base:

1. Roast a medium sized chicken and allow to cool to  room temperature 

2. Remove the white meat and place on a large cutting board 

3. Cut the white meat into 1x1 inch chunks and place back into a large mixing bowl

4. Add 2 eggs

5. Add 2 cups of shredded cheddar cheese

6. Add 1 cup of shredded parmesan cheese

7. Add 1 tbsp almond flour


Preheat the oven to 400F

Mix all ingredients in the large bowl and form a large ball with your hands 

Grease the “pizza” pan with butter

Place the chicken “dough” onto the center of the pan

Spread out to cover the entire pan with a raised outer edge like a pizza crust.

Place in oven and cook until tender with the butter bubbling from the edges.

Remove from oven.


Toppings:

1. Make your keto-friendly red sauce 

(3 cups of diced tomatoes, garlic, limited onion, a splash of a dry red wine, extra virgin olive oil, salt, pepper, red pepper flakes to taste. Add 2 tsp of erythritol if the sauce is too acidic)

2. Slice your bufala mozzarella and season it

3. Cut the prosciutto de Parma into strips


Milanesa de Pollo Napoletana Preparation:

This is the easy part. Just treat it like you’re making a pizza!

Add your sauce

Add your cheese

Place in the 400F oven and cook until cheese is melted


When the cheese is almost melted to your liking, add the prosciutto for 2-3 minutes to sweat. You can alternatively do this in an air-fryer and add on top of the completed dish. 

Prosciutto can be replaced with any ham or even bacon. 


Note that in a traditional milanesa de pollo napoletana, the ham is placed on the bottom with the sauce and cheese on top.
