- Preheat oven to 425F
- Add salt and pepper to the 2 inch thick pork chops
- Peel a head of garlic
- Add 1 cup of ghee to a bowl and melt
- Add the garlic to the ghee
- Seer the pork chops on high heat with some olive oil for 2-3 minutes per side until browned
- Turn off the heat and pour in the garlic and ghee mixture
- Using a spoon, pour some of the liquid on top of the pork chops
- Add the thyme sprigs to the pan
- Place the pan in the oven and bake for about 10-15 minutes until you have an internal temperature of 125 F
- Pour more of the liquid ghee mixture on top of the pork chops and serve
- cook your bacon, crispy is ideal
- Cut the bacon and place in a bowl
- Sauté the snow peas in olive oil with black pepper and 1/2 cup of water.
- Cover and routinely stir until tender yet still crisp on the inside
- Drain the liquid
- Place the snow peas in a serving bowl and pour some of the ghee mixture and stir
- Top with the crispy bacon and serve
