Keto Un-Ravioli: Spinach & Ricotta Bake
This is an easy side dish that is so good, it can be a vegetarian main dish on its own.
The subtleness of the ricotta makes a quick tomato and basil sauce as the ideal pairing.
For this meal, the keto un-ravioli was served with Italian sausages topped with a sautéed jalapeño and prosciutto.
Ingredients:
- 1 large container ricotta
- 2 eggs
- 1 cup almond flour
- 1 cup mozzarella
- 1/2 cup parmesan
- 1 cup cooked spinach
- 2 tsp Garlic power
- 1 tbsp onion powder
- Salt and pepper to taste
Recipe:
- Preheat oven to 425F
- Mix all ingredients in a bowl
- Pour into medium size glass cookware
- Top with additional mozzarella and parmesan
- Bake at 425F for 20-30 minutes
- Broil for a few minutes to brown the top layer of cheese
